Wednesday, July 29, 2009. WE SURVIVED SIXTY MILES! DAY 1: POURING RAIN. It gave a new meaning to raining cats and dogs. We had on leggings, fleeces, raincoats and ponchos and were soaked to the bones. 19.7 miles. But we cruised and finished in the top 50 out of over 1,700 walkers. Tranquility Camp - love the sea of pink tents. What a long and painful day. 22 miles. Hills. Multiple hills. Little sidewalks. Highways. High traffic areas. Oh and hot, hot sun. We were cruisin. And along the water to the UMass.

I made them for a BBQ cook-off and although they didn't win, they were a big hit. I served them with a nice pear and avocado salad to balance the richness of the shrimp pops and sauce. 1 cup unsweetened coconut milk, stirred. 1⁄3 cup peanut butter. 1 teaspoon finely grated lime zest. 3 tablespoons fresh lime juice. 1 tablespoon soy sauce. 1 tablespoon brown sugar. 1 pound ground pork.
