Casa de Esperanza II. Sunday, October 11, 2009. The Things We Do That Make Us A Parent. I'm sitting at the computer in the dark. It's been a looong weekend. My poor Caleb has the dreaded H1N1 (aka: piggy flu, "Hiney" flu, whatever). Thankfully, he's doing better this morning. Fever is down a bit, he's still sleeping and I got a mostly full night's sleep. I won't whine, mind you, but I will say that I am missing 3 important things this weekend:. I sent him off to Kansas City yesterday to a Jayhawks game.

Casa de Esperanza II. Tuesday, February 23, 2010. Just a quick post: We are leaving for Spring Break in 2 1/2 weeks! Why, New Mexico, of course. All of us are waaaay too excited to be with our fam and our friends. ALL BY. MYSELF? Ok, I don't need to panic yet. We have another month before any of that takes place. I've become quite used to going to work and kissing HIM good-bye. Anna Mary turns 11 years old tomorrow (Feb. 24th)! She's so tall, skinny, beautiful, and very witty! She's always making us laugh.

Casa de Esperanza II. Monday, April 12, 2010. Ok, so it's been about forever since anyone has updated this thing, especially me. So, here ya go. First off, this past weekend was Jake's last basketball tournament; 4 games on Saturday: 10:00, 1:00, 6:00 and 8:00. Talk about "all day"! Anyway, he's been working for the past 2 weeks, along with 4-5 other guys, with former KU Jayhawks player Alonzo Jamison. At halftime the score was tied 21-21 and Jake had 19 points! Thank you, Alonzo! In and out of Africa.

Casa de Esperanza II. Thursday, September 24, 2009. Homemade Deliciousness.Peanut Butter Oatmeal Bars. I must say that this is not MY recipe, but rather from my Mom's bestest friend ever, Julia Sommers. I must give credit where credit is due. She gave it to me at my bridal shower, so many years ago, and everyone goes nuts over it. Peanut Butter Oatmeal Bars. 1/2 c brown sugar. 1/3 c creamy peanut butter. 1/2 t baking soda. 2 c powdered sugar. 1/4 c unsweetened cocoa. 3-5 T boiling water.

Dog/Chicken Duty" - this means that each kid is in charge of one of our pets for a week at a time. Chores List" - each day each kid is assigned a specific chore(s) that has to be completed (to momma's approval) before they are allowed to go off for the day. Thursday morning was a hoot. Casa de Esperanza II. Monday, November 9, 2009. This looks involved, but it's really a snap to throw together. We all need a new recipe now and then, don't we? 1 whole chicken, cooked, boned, yada yada. 3-4 NM green chiles seeded and chopped (OR 1 can chopped green chiles). 1/2 can creamed corn. 2 c shredded cheese. 2 t taco seasoning. 1 t baking powder. 2 T melted butter, or oil. 1/2 can creamed corn. Use canned chicken or chopped chicken breasts. Mix up a box of Jiffy cornbread mix and call it good!

Saturday, May 29, 2010. 3 med tomatoes, seeded and diced. 1/2 cucumber, seeded and diced. 1 1/2 c. parsley, coarsely chopped. 2 T fresh mint, chopped. 1/3 c lemon juice. 1/3 c olive oil. Rinse quinoa in cold water, rubbing between fingers to remove bitter, outer layer. Bring 2 c. water to a boil. Add quinoa. Cover and reduce heat. Simmer for 15 min. or until water is absorbed.
