Remember the life, invaluable of remembrance 生活小品，人生旅途. 趁假期，一家人去海滩渡个假。并且现在渡假村有特价，所以比较值得去，因为平时较贵。无意发现每年去渡假都是巧遇马来同胞过年的前后几天。到海滩去孩子和我俩人都晒到黑黑，皮肤痛得很。这次靖弘去海滩比较胆敢去玩，前次较胆怯。去到渡假村也有游泳的设备，靖弘也是不大敢去玩水。经过一轮的“训练”才敢去玩了。 Tuesday, September 30, 2008. Sunday, November 03, 2013. 12304;豬肉去腥的不傳之秘】！！！絕大部分的人是用蔥、薑、酒來處理。可是請仔細想想，那只是壓味而已。.查看更多. 絕大部分的人是用蔥、薑、酒來處理。可是請仔細想想，那只是壓味而已。壓贏了，肉味也沒了；壓輸了，更臭。找一口大鍋，裝滿冷水。將生的豬肉略沖洗後放入，置於爐上。開火，要將火開到最小最小，直到再小就熄滅那麼小，. 原則是火要小，水不能冒汽)。半小時後，會發現整鍋水泛紅(血水)，. 將水倒掉，用溫水沖洗並搓揉一下豬肉，這樣的豬肉才算去腥。蔥薑酒在料理中應該是用少量來增香用的；大量的用來壓味，君臣之道就亂了。以上方法在台灣廚師的術語叫「跑活水」，算是不傳之秘。至於絞肉，因為不能如此處理，只能退而求其次，先用小火(不可用大火！). 炒出水，然後倒掉臭水；怕臭的還可以放在篩子中用熱水快速沖一下表面殘留再料理，也能去腥。 Subscribe to: Posts (Atom).
