Leicestershire Handmade Cheese Company. David and Jo started making ‘Sparkenhoe’, a traditional Leicester Cheese in November 2005. They use the milk produced from their own cows and this is pumped straight from the parlour directly into the cheese vat ready to make the cheese. They now have two new additions to the dairy - Bosworth Field and Battlefield Blue! These are both made with unpasteurised milk and handmade in the dairy.

Handmade cheese from the milk produced by our own dairy cows who graze the lush Leicestershire pastures near Market Bosworth. Our cheese is made with love and care to a traditional recipe and mould ripened on beechwood shelves.

Leicestershire Handmade Cheese Company. A history of Sparkenhoe. Sparkenhoe is being made on a Leicestershire farm, something that has not happened since 1956, therefore this cheese is the ONLY Leicester to be made on a farm with raw milk in Leicestershire. Sparkenhoe is an old Leicestershire name meaning gorsey nob. It was the name given to the old medieval one hundred area and as the farm is situated in the middle of this area it was named Sparkenhoe Farm.

An English and Welsh cheese tasting. January 19, 2012. I tend to talk about cheese at work. A lot. So, having made everyone listen to me and having inflicted the smells of my various purchases, I tried to make up for it by holding a tasting night. We worked out way through eight cheeses from England and Wales (the 9th piece above was one of my Camemberts), starting with a fresh English goats cheese from the Cotswolds called Cerney. Ash-coated and only a week old, this was fresh, lightly lemony and mild.
