I prepared a recipe off of Anne Burrell’s show, Coq au vin, which basically translates into chicken in wine. Here’s my adaptation:. 6 boneless skinless chicken breasts. 1 onion, large, diced. 1 lb button mushrooms, quartered. 6 stalks celery, diced. 1/2 lb bacon, diced. 15 qt chicken stock. 1/2 can tomato paste. 1 qt Red wine. 1/2 lb pearl onions, blanched, with wrappers removed. 4 cups cooked rice.
