Thursday, November 14, 2013. Spiced Pork Chops w/Sweet and Sour Glaze*. Occasionally, I like to make a "man's meal" for Jay O. This is about as close as I get! It was really tasty. I will say, if you don't have a ventahood, you might want to have someone handy to open the doors and fan out the smoke ;) However, it was worth the trouble! Original recipe found here. 1/4 cup olive oil, plus extra as needed. 4 (8-ounce) boneless pork chops, about 1 1/2 inches thick. Kosher salt and freshly ground black pepper.

Monday, June 23, 2014. This is the marinade I did over the weekend for Saturday's dinner. I had done this a few times last year too, but never got around to posting it! It is definitely my favorite marinade, especially because you can work Mexican flavors in with the rest of the meal, too. It's a nice change to stick with a Mexican theme, but not to have the typical enchiladas, fajitas, etc. I recommend marinating the chicken overnight. Chicken of your choice (I did 11 chicken thighs). 2/3 cup olive oil.

Tuesday, June 17, 2014. This is another refreshing summer appetizer that has become one of my favorite things to prepare! One plus is, it requires no cooking. The only thing that makes this at all difficult is having patience with the prosciutto, because it tears very easily! On a side note, I am not a huge fan of cantaloupe, but I do enjoy it this way. However, this one was still great and I will definitely make this recipe more often because it is MUCH lower cal :-). I cherish this strong tradition more and more every year. At only 2 1/2 weeks, this was Hudson's first trip to Booneville and first Thanksgiving. I was of course very excited to show him off to everyone. Always a smilin'. . . I sure love this man :). Although a few found fun in other outlets . . . January 15, 2013, Papaw suffered complications following a hernia surgery which resulted in problems with his kidneys, heart, and lungs. And after he was airlifted to Fort Smith. His family filled the waiting room. With hope, prayers, support, and love. For one of the most precious men we've known. Fun and laughter (and dozens of Paul Hicks' stories).
