Mekuah Gedang à la Von Holzen & Arsana 20-10-2006. 8212; sparklingcosmic @ 12:55 am. 1 pepaya hijau, berat sekitar 750 gr. 1 liter kuah siap (kaldu ayam). 250 ml base jukut (sambel dasar untuk sayuran). 1 batang lemongrass, geprak. 1/4 sdt merica putih. Kupas pepaya, bagi dua memanjang, dan singkirkan bijinya. bagi lagi pepaya terserbut 4 sampai 6 potong memanjang, dan potong tiap sisinya sekitar 1/2 cm tebalnya.

Kuah Siap (Kaldu Sapi Bali) 20-10-2006. 8212; sparklingcosmic @ 12:53 am. 5kg tulang ayam, dicincang 2,5 cm. 375 ml base be siap. 3 lembar daun jeruk purut. 2 lembar daun salam. 1 merica hitam yang ditumbuk. Cuci tulang dengan air sampai air jernih, letakan dalam panci besar dengan air dingin sampai terendam, dan didihkan. Keringkan airnya, cuci lagi tulang dibawah air mengalir. 20-10-2006 at 1:20 am.

Rasanya beda gak sih? 10 cm kunyit (saya ganti pake kunyit bubuk). 6 cabe keriting, buang biji dan cincang. 1 sdt terasi kering.

L’éschalote d’indonésie a la peau rouge et plus petite que l’éschalote en Europe. A la cuisine balinaise on l’emploie pour faire de la pâte epicée; on la trance et l’ajoute à la nouriture avant de cuisiner, ou on la trance et faire friter puis la serve comme garniture.
