Sheep which are over two years old, excellent flavour with higher fat content than the hogget, larger cuts than Hogget or Lamb. All cuts are suitable for slow cooking, casseroles, stews, Irish stews roasts, curries, and for the joints, slow roasting. The meat can also be minced for cottage pies, pasties, meat balls etc. Cuts available Lamb, Hogget and Mutton. Leg Joint on the bone - Whole or Half. Shoulder Joint on the bone Whole or Half. Chops small - lamb / Hogget, Large Mutton. Breast Boned and rolled.
When we purchased the farm, it had two large barns, a couple of stables and two fields which were separated by fencing which was falling down. The stables have been replaced by a new barn and the two fields have been split to enable us to split the livestock when necessary.
