Peanut Butter-Chocolate-Rainer Cherry Smoothie. 3/4 cup unsweetened chocolate almond milk. 1/4 cup unsweetened almond milk. A couple frozen rainer cherries. 1/2 T peanut flour. 1/8 t xanthan gum.

Sunday, January 16, 2011. One of the things I thought I would miss after going vegan was tuna sandwiches. Fortunately, there is a vegan substitute that is just as delicious and, unlike tuna fish salad, which I grew up erroneously believing to be a health food, the vegan version is actually not that bad for you. 15 cups cooked chickpeas (if canned, drain and rinse). 1 tbsp vegan mayonnaise (I use Vegenaise, but Nayonnaise could work just as well). 2 tbsp sweet pickle relish. 1/2 tsp kelp powder (optional).

Wednesday, June 22, 2011. Quite a while ago, John and I stopped by One Love Cafe, a vegan-friendly restaurant here in Worcester. I dutifully took pictures and made notes, and then never blogged about it. So I figured, why not remedy that now? For my entree, I chose the Rasta Pasta, a tricolor pasta dish with veggies and a cheezy, spicy tomato sauce (sprinkled with Daiya). It was creamy, fresh and delicious!
