I had halved the original recipe so the yield was around 20 cookies, and the two of us finished these in two days. Makes 450 gms or 16 Oz). 4 Apples peeled, cored and chopped. 1/2 tsp Cinnamon Pdr. 1/4 tsp All Spice. Juice of half lemon. 1/2 tsp Baking Soda. 1 Cup All Purpose Flour. 1/4 Cup Crystallized Ginger Pieces chopped fine (instead of nuts in the original recipe).

In my mind I always thought making Pita bread would be a very time consuming laborious process involving a lot of luck and precise planetary alignment but that surely is not the case. Especially for us rolling pin wielding - roti-making Indians the stovetop version is similar to how we make our chapatis and fulkas everyday. I adapted the recipe from here. And here's what I did different from the original recipe. A big thank you to my friend Subha for clicking all the pictures.

He is not a fancy schmancy chef but he certainly has a few signature dishes which in his words ".are a repeatable process". You can see he has been in the IT industry for far too long .sigh! 4 Small - Medium Boiled Potatoes. 3/4 C Peas / Matar. 1 Tbsp Hunts Tomato Paste. 1/4 tsp Cumin seeds. 1/2 tsp Corriander Powder. 1/2 tsp Red Chilli Powder / Cayenne Pepper. 1 Peel the potatoes and cut them lengthwise.

Thursday, February 14, 2013. 1/3 Cabbage sliced thinly. 1 Small Potato cubed fine. Handful of Frozen Peas. 1 Small piece ginger. 2 tsp Red Chilli Powder. 1 tsp Corriander Powder. 1 tsp Garam Masala. Small piece Jaggery (optional). 1 Heat oil in a pan. Add ginger and garlic sauté for a minute, then add onions sauté for a couple of minutes then add carrots, potato keep stirring.
