Costituire partendo dall’analisi di aziende campione rappresentative per la produzione viticola, una base dati che permetta di tracciare il profilo attuale della viticoltura italiana per quanto riguarda l’eco-sostenibilità. Definire nel rispetto delle indicazioni dell’Unione Europea e di organismi come l’O.I.V. le linee guida per una produzione sostenibile. Formare tecnici in grado di portare avanti nelle aziende i protocolli di sostenibilità proposti.
