The crust is crunchy and sweet with the distinct smell of almonds, it was my kids’ favorite part. 2 1/4 cups shredded raw zucchini (pressed and strained). 1 cup vegetable oil. 2 1/2 cups gluten free flour (again I use Jule’s). 1 teaspoon baking powder. 2 1/2 teaspoons baking soda. 1 teaspoon almond extract. 1/2 cup Chia seeds (add a crunch and more fiber and protein). Recently got my beautiful kitchen aid back up and running with the help of a new transformer so to celebrate, I decided to bake one of my ‘cravings’! Very easy to make- ingredients can be found very cheap (heads up-evaporated milk in Aldi only 70c! 15 cups flour (6.6 oz). 15 teaspoons baking powder. 1 teaspoon baking soda. 1/4 cup milk (60ml).
