Our Mission and History. The Participant Observer Recipe of the Month is the national dish of Senegal Thiéboudienne or Senegalese Fish with Rice. Traditionally eaten from a communal platter, the dish consists of spiced and fried fish, various roots (including cassava, known here as yuka), dried hibiscus flowers, in a tomato and stock base.
