Sweet Potato (Kumara), red lentil and corn soup. May 14, 2015. May 14, 2015. This is a very easy, quick and tasty soup. Great for these crisp autumn evenings. The creamed corn is optional, but it gives the soup a bit of sweetness which my children enjoy. You can leave it out, or add some coconut milk at the end of the cooking time for a different flavour. 1 large sweet potato, roughly chopped. 1 or 2 carrots, roughly chopped (optional). 2 cups red lentils, rinsed and drained. 1 can of creamed corn.

I highly recommend it for an overview of the current research into the Mediterranean Diet. In summary, more recent research has only strengthened Ancel Key’s original observations.
