creamy cannellini beans | VeggieAtlas

Exploring the wonderful world of veggie food. November 7, 2013. I’m a bit in love with cannellini beans. They are the perfect bean for salads, smooth dips or to blend into soups or mashed potato to make them creamy and for added protein. But when it comes to cooking them, I’m a tad slack. I rely on a supply of tinned beans because of my tendency to decide on meals last minute, and I find they are cooked to perfection, unlike my past attempts. On this can of worms (sorry, couldn’t resist). Soak the beans ...

Exploring the wonderful world of veggie food. December 12, 2013. I’ve always had it in my head that I didn’t really like Christmas. I’ve found the family politics a little difficult, the commercial aspect hard to swallow and the expectations high to make this one day have a magic to it that it didn’t live up to. Yes, it’s nice to see family and to spend time with friends, and I love that summer is coming on strong, but I was focusing my dislikes on this one particular day and it tainted the lead up to it.

Wednesday, September 14, 2011. I have been in such a recipe slump for a long time, cooking mainly from books or things I have memorised but finally I bring to you AN ORIGINAL! After a recent trip to Costco we got quite a few things in bulk that have been hanging around the pantry waiting to be made into something delicious. With a rumbly tummy I pulled out quinoa, canned tomatoes, 4 bean mix and thought to myself, "what can I do with these? Then a lightbulb went off - Chili Con Carne! A can of lentils.

Friday, April 29, 2011. Vegan in Los Angeles. Recently we visited the United States for a quickie marriage in Las Vegas but found ourselves on the biggest vegan food adventure ever. The absolute abundance and availability of vegan food in America is overwhelming! We took every opportunity we could to eat as much as we possible. Exploring the wonderful world of veggie food. July 18, 2013. Anyone who knows me knows I’m a sucker for mushrooms. So when I saw an uncrowded, purple table at the markets with only a glass cabinet that showcased a dozen black truffles, I got excited. Hideously expensive yet hugely attractive, the truffle is the holy grail of mushrooms…. I’d never seen one before and have only tried it once two seasons ago in the best cauliflower dish I’ve ever eaten. I finally understood what all the fuss was about.
