Recipes – Rabbits Nest

It takes courage to grow up and become who you really are. e.e. cummings. Zucchini and Chocolate Cake. 1 Cream 1/2 cup soft butter and 1 3/4 cup sugar. Beat in 2 eggs. Mix in 1/2 cup oil, 1/2 sour milk, 1 tsp vanilla, and 2 cups grated zucchini with skin left on. 2 Mix together 2 1/2 c flour, 1/3 cup cocoa, 1 tsp Baking Soda, 1/2 tsp Baking Powder, 1/2 tsp cinnamon. 1/2 tsp salt. Add dry ingredients to the wet and stir till moistened. For the cake pictured I substituted carrot for zucchini. 1 1/3 cups oil.
