Thursday, October 23, 2008. I have some bad news. My computer has recently taken a turn for the worst. A couple of nights ago it fell off the dresser at home and now the screen is cracked. Big oops! Tuesday, May 5, 2009. A Week at Camp. As I previously mentioned, thanks to the families at West Nairobi School and those of you at home, we sponsored 166 kids to go to camp. These slum students spent a week in paradise. three meals a day, warm beds to sleep in, a bible to study from, fun activities to take part in, and teachers who loved on them. Funny story. Friday, July 31, 2009. Two days of traveling and a lengthy layover in Amsterdam means that I have arrived safely once again to the flat, dusty plains of western Kenya. After a six week visit to the states, I begin my second term here. A fun time was had by all. Susan Seiling and I had to arm wrestle over who got the bunco because we each got a bunco at the same time. So the arm wrestle didn't go so well. With potatoes on my mind and pie dough in the freezer from a previous day, I set out to experiment with making a pie worthy of dinner but not too difficult time-wise. Voila! Sausage Potato Torte :. Adapted slightly from Brown Eyed Baker. 3 german sausage, fresh, casings removed and cooked until no longer pink. 3 medium baking potatoes, peeled and sliced thin. Salt and freshly ground black pepper.
