2010 The Springer Blend. After open fermentation, plunging several times daily, the wine was left on skins for three weeks to integrate the massive tannins and build the wine's exceptional length. The very heart of this outstanding ferment was drained into just three new D&J French barriques for 30 months maturation. Dense, slight purple edge, crimson. Intense, rich, black fruits with layers of concentrated plum paste and hints of praline. Cork 14.5% alc. Rating 98 to 2035. Peter Scudamore - Smith MW.

2010 The Springer Blend. Warm Duck Breast and Fig Salad. A wonderful autumn dish, when our fig tree is bearing lovely black fruit, duck breasts are fruitful at the Barossa Farmer's Market and the Tempranillo is slightly chilled to 17-18 degrees. Yum! We use wild rabbits for this dish, and the Barossa Valley's own Schultz's thick smoky bacon. It's wonderfully matched with our Springer Blend. Hare and Green Peppercorn Pies. Slow Cooked Cinnamon Beef Cheeks with Cauliflower Cream. 2010 The Springer Blend.

2010 The Springer Blend. Image by Good Food. 2010 The Springer Blend. As vibrant, lively and fresh as our Marananga vineyard hares which spring from their hiding places. A sensational complement to kangaroo fillet or duck cassoulet. We use wild rabbits for this dish, locally shot usually by Grant, through the head with a single bullet. We would always use Schultz's thick smoky bacon with the rabbit, it is an important flavour component but I guess there must be other substitutes available. Add the flour,...

2010 The Springer Blend. Our Marananga vineyard's take on Spanish Tempranillo, reveals layered Mediterranean freshness and fruit flavours - quinces and pomegranates and cherries. A stylish, medium bodied red that works well with succulent charcoal grilled quail or lazy Sunday afternoon tapas. Fleshy and softly earthy, with rose petals, plums, violets and hints of spice; while nutty overtones resonate throughout the plush palate structure. An approachable and easily drinkable style. Game On, Hares | Hares Chase, Barossa Valley
http://www.hareschase.com.au/game-on
2010 The Springer Blend. Game On, Hares. Why Hare's Chase? It started out with a near heart attack - walking through the vineyard and being startled by the bolting, feral hares. Unlike rabbits they live above the ground in little scrapes (or forms) and when you scare them they take off like rockets. The dogs love the chase. So which came first - the wine or the hares? Do you like the hares? They taste good too. Are they good to eat? The 2013 Ironscraper is a wine that suits its name. Deep crimson in ...

2010 The Springer Blend. Warm Duck Breast and Fig Salad. Layered Mediterranean freshness and fruit flavours - quinces and pomegranates and cherries. A stylish, medium bodied red, brilliant with succulent charcoal grilled quail or a lazy afternoon Tapas. This is a wonderful dish in autumn when our fig tree is bearing lovely black fruit. Sometimes we make our own fresh goats cheese if we can get hold of the milk and that adds an extra special taste to the dish. The 2013 Ironscraper is a wine that suits its...
