What I love, What I do, (from the Kitchen). Thursday, January 15, 2015. Mega Meal Day(s) New Dietary Challenges. Over the years we have had favorite meals as a family. Recently we have had new challenges that have caused us to rethink some of our recipes. We have a dairy allergy, gluten intolerance, and most recently a severe nut allergy that gave us quite a scare, as well as diabetes! As I had these mega cooking and days I had to alter some of the ingredients and my taste buds were put to the test.

Obviously the Ranch Dressing does not meet the dairy free requirement but it fits into all of the other dietary needs in the family. I love this recipe and am not sure why I stopped making it in the first place. Our little dippers love it as much as the bottled kind and some of my girls like it even more. Hiking and other stuff. Saturday, April 26, 2014. April 26, 2014 Ho`omana`o `Ana o Ke Kaua Lelea`anae (Commemoration of the Battle of Nu`uanu). In 1795 Kamehameha battled with Kalanikūpule for control of O`ahu. The battle for O`ahu culminated in Nu`uanu Valley and what is today called the Pali Lookout. I woke up at 3:30 am and drove up to the Nu`uanu Pali Lookout for Ho`omana`o `Ana o Ke Kaua Lelea`anae. It was a windy and rainy morning. I felt for the young men who endured the cold in only their malo.

The inner crater at Halema`uma`u filled with lava to the point the it was overflowing onto the crater floor and was clearly visible from the Jaggar Museum overlook. I headed to Hilo with my father and stayed at my brother's house in Hawaiian Paradise Park to see Halema`uma`u in action. The first night (about 1:00 am) it was cloudy and rainy. As it made it's appearance in the night sky, just after sunset. I took Hōkūle`a with me and we headed up in the hills above Honolulu, to the trail head. For the Kalawahine trail. Hiking and other stuff. Thursday, July 24, 2014. July 6, 2014 Halema`uma`u. Wouldn't be a trip to the Big Island without visiting Halema`uma`u. Especially at night. The crater lookout at the Jaggar. Being that it was Fourth of July weekend Volcano National Park. Had park rangers lining up traffic and parked cars down the road leading to the lookout. I've never seen the lookout so packed! Made for a spectacular sunset. Sunset illuminated clouds over Mauna Loa. People were lined up along the lookout wall.
