Vegan Spinach Artichoke Dip. I’m currently wondering why we only know of cheesy cheesy cheesy spinach artichoke dip. Here’s another option that is just as tasty and doesn’t leave you feeling like a wheelbarrow is the best means of transportation. And, ya know, there’s that whole healthy thing. I now believe in magic. 4 c packed raw chopped spinach. 1/2 c raw cashews soaked in water for 4 hours (preferably overnight), drained well. 1/4 c coconut milk (full fat). 1/4 tsp onion granules. 1/4 tsp kosher salt.
