Thursday, January 27, 2011. This time around I wanted to try grating the beets, so there would be actual flecks in the cake. I used both golden and red beets, grating them separately to preserve the golden beets color. Unfortunately, I did not have a full pound after grating, so tweaked the recipe a bit increasing the fats to keep it moist. This cake is the winner for sure! Golden and Red Beet Cake. Bake at 350, approx 40 minutes for 2 - 7.5" x 3.5" loaves. 14 oz dark brown sugar. 3 1/2 oz vegetable oil.
