Enjoying one turn-on at a time. Tuesday, January 24, 2012. The cooking of the ducks was a success! I have to say, this may be one of my most favorite cooking memories. This whole experience with the ducks has been a new and invigorating one. Although I was not able to bring it completely from field to table, I was pretty damn close. Slow-Roasted Female Mallard Duck with Orange-Sherry Sauce over a bed of Carrot and Roasted Red Peppers with Oyster Mushrooms paired nicely with The Black Box Sauvignon Blanc.

I am in my last 2 weeks of living in Charleston and working at HUSK. I will be moving outside of Knoxville, TN to work at the prestigious Blackberry Farm. I have taken an AM pastry position and will start on February 25th. SO SOON. Although the 4 am - 2 pm shift will take some adjusting to, I am so excited for my new adventure.
