Waiting for the dough to rise. I just picked up a great book called Ultimate Bread. By Eric Treuille. Ultimate Bread is very straight forward, with great photography of each step involved. I've been meaning to try to make bagels for quite some time and their recipe is fast and easy. 2 Tsp Dried yeast. 1 1/2 Tbs sugar. 1 1/2 Tsp Salt. 1 Sprinkle the yeast and sugar into 100ml of the water in a bowl. Leave four 5 minutes and then stir to dissolve. 6 Knock back the dough, then leave to rest for 10 minutes.

A Cookie for Every Country. Latvian cuisine overall has been greatly influenced by its neighboring countries. Tokorzvarhitjas, or bowknot cookies, may have originated in Latvia, but the idea is basically the same whether the cookie is made in Poland, Lithuania, Bulgaria or Russia. The basis for this delicious treat is a sour cream dough that is rolled out, cut deep fried and sprinkled with confectioners sugar. 1/2 cup confectioner's sugar. 1/2 tsp grated lemon rind. 6 tbs sour cream. 3/4 tsp baking powder.

Saturday, November 15, 2008. I've been cooking up a storm this week. We may not eat out very often anymore, but I'm trying to expand our repertoire of deliciousness around the house so that maybe we don't miss it so much. Two of the highlights included this totally insane apple cake. Does anybody need an Apple Cake? I'm ready to make it again. Sunday, August 31, 2008. This picture is awful, but this salad is so good! 2 tsp clear honey. Juice of ½ lemon. Salt and freshly ground black pepper. Place almonds on a baking sheet, and toast in the oven for 10 min, or until golden, set aside. Stir in the toasted almonds just before serving.
