The butternut squash makes a thick and satisfying soup and the spices balance out the natural sweetness of the roasted vegetables and apples. 8 cups butternut squash, peeled and cubed (2 pounds). 1 Tbl olive oil. 2 cups apple, peeled and cubed ( pound). 1 cups onion, chopped. Cup celery, chopped. 2 tsp curry powder. 1-2 garlic cloves, chopped. 3 (145 ounce) cans of chicken broth. Cup sharp cheese or plain yogurt.

But, it also brings me memories of my backyard bbq’s. My pops loved his garden and his smokey joe and my mother made the most killer concoctions out of strawberries.
