Tuesday, July 20, 2010. 1/4 cup olive oil. Ground Annato Anchiote ( found in latin section). Whole chicken cut into parts. Remove skin to reduce fat. 1 large yellow onion diced. 10 cloves garlic, minced. 1 green pepper diced. 1 jar capers or green olives(optional). 2 cups long grain rice. 12 basil leaves cut into strips. Fresh Parsley Handful, cut up. 4-5 cups chicken broth. Salt and pepper to taste ( 1/2 teaspoon I used). 1/2 cup frozen peas. Garnishes: Pimentos or roasted red peppers in jar.
