Thursday, July 12, 2012. Vegan Cherry Almond Cake. To increase the cake's protein, fiber, and nutrient content, I added almond meal to the base. It does give the cake a slightly grainy texture, so for a more traditional smooth cake, substitute flour for almond meal in this recipe. 1/2 cup Earth Balance, melted. 3/4 pound fresh sweet cherries, pitted. 1 cup flour (I use Bob's Red Mill Gluten Free All Purpose Flour). 1/2 cup almond meal. 1 1/2 teaspoons baking powder. 3/4 cup raw sugar. 1/3 cup almond milk.
