Monday, 15 October 2012. 芋头 - 去皮净重 200g. 奶油食油猪油 - (我用白油) 25g. 五香粉 - 1 4小匙. 胡椒粉 - 1 8小匙. 1 芋头洗净切小块，(芋头摸了会痒，所以先戴上手套或搽上白醋，又或者保持手部干爽, 可以避免)，切块了拿去蒸熟，尽量把芋头排好，不要重叠. 2 把蒸好的芋头块加入糖，盐，五香粉，胡椒粉，用叉压烂，或用搅拌机搅至粘烂. 3 碗里倒入澄面粉，加入热水，用筷子趁热快速搅拌均匀，很快就会拌好，加入搅拌好的芋头粘状，搅拌均匀，再加入白油，搅拌均匀，形成面团，放入冰箱20分钟. 4 20分钟后，面团温度降低了，比较不粘手，撒上一些玉米粉，稍微搓揉面团，把面团搓成长条状,再把两端粘起, 搓成圈形, 放入冰箱20分钟. 5 热锅放油，最好是可以盖过芋头圈，待油温高时才放芋头圈去炸，炸时可以一直翻转芋头圈，就会炸出比较均匀的金黄色，变可捞起.
