Saturday, February 23, 2008. I'm experimenting with the "bites" again ;) I think I've found my favorite version so far. If you haven't tried my other bite incarnations: think crustless quiche only way better. This one would be awesome on a breakfast buffet. They heat up really well in the toaster oven (or regular oven) so you can make a batch and get several breakfasts out of it. The cute mini size makes it a neat weight loss surgery friendly appetizer or light supper with a salad. 1/2 Yellow Onion, diced.

Honey Mustard Chicken Salad. 2 cups cooked and cubed chicken breast meat (rotisserie leftovers are great). 1/2 cup chopped pecans, toasted. 3 stalks celery, sliced. 1-2 green onions, diced. 1 large apple, chopped (or 1/4 cup raisins, or 1/2 cup grapes). 1/2 cup sour cream. 1/4 cup Dijon mustard. 1 Tbs cider vinegar. In May of this year I took some drastic steps to change that for health reasons. I had Roux-en-Y Gastric Bypass surgery. I have since lost over 100 lbs - and I have a lot more to go.
