Fresca Magra

Fresca Magra (Italian Meatloaf). Chopped meat, 1-2 lbs (sirloin, chuck, or turkey - for lowfat). Italian-style breadcrumbs mixed with grating cheese, to taste. Romano cheese, small wedges. 2-3 eggs, plus 1 hard-boiled egg. Salt and pepper, to taste. Thin, white string for tying meatloaf. Olive oil, for frying. 3-4 pieces of Romano cheese. Tomato Sauce

1 lg can (32 oz) of Italian tomatoes (with basil leaf, preferably). 3-4 cloves garlic, quartered. Fennel seed, to taste (optional). 1 T olive oil. Salt and pepper, to taste. Hand-squeeze the tomatoes into a large frying pan. Add garlic and fennel, if using. The fennel is optional and is used to impart an Italian sausage flavor to the sauce. Cook over a low flame until the tomatoes become a little dry. Next, add the olive oil, being careful not to make it too oily! Recipes © Edmund Scalzo.

Calamari

Small can (6 oz) tomato paste. Large can (32 oz) whole tomatoes. 1 lb pasta (linguine or spaghettini, preferably). 4-5 T olive oil. Salt and pepper to taste. Note: no garlic is used in this recipe. Squid must be cleaned very well. (Purchasing Ã Â Â already cleanedÃ Â Â squid will make this part easier.) Even if it was cleaned by the fish market/department, it must be cleaned again and again, as follows:. Turn cut pieces inside-out and clean again, as above. Rinse again under cold water.

Tomato and Paste Sauce

Tomato and Paste (Meat-flavored) Sauce. 1 large can (32 oz) Italian-style tomatoes. 1 small can (6 oz) tomato paste. 1 medium or large onion (per taste). 2-3 cloves garlic, quartered. 3-4 T olive oil. Fennel seed, dried (optional - not necessary, especially if Italian sausage is used for flavoring). Salt and pepper, to taste. Using any one of the following meats will make a tasty sauce. Any additional meats will improve the flavor. 1-2 lbs Italian-style sausage. Only for special meals).

This recipe demonstrates the tomato and paste sauce. When cooked with sausage. Slice onion in thin pieces, Quarter (or halve) the garlic. If sausages are connected by string, cut into separate pieces and put aside temporarily.Put one can of tomatoes into a large pot, squeezing them if plum style, and add the garlic (one or more, per taste), season with salt and pepper per taste and simmer over a low flame.
