Monday, January 9, 2012. I've been having a cooking attack and I'm certainly not going to do anything to stop it! I'm enjoying this and the food is actually pretty darned good! Today I was roasting veggies for my lunch, and I decided to double up and roast a butternut squash I had sitting around. I chopped it, spiced it (complete recipe below) and roasted it. A minute or so later, I threw in the butternut squash, and cooked for a minute or two. It was delicious and even better reheated! 1 tsp canola oil.
