When I mentioned to Subhash how inefficient the whole set up was…he looked at me and said, “aisa hi hai” (that’s just how it is). I guess that sums up the whole bureaucratic system here: the frequent power outages, the lineups, the disinterested personnel….Aisa hi hai. What Did You Have For Dinner? One of the local meals I've developed a craving for here in Zanzibar is ironically something that is not readily available on this predominantly Muslim island: kiti moto. It means "hot seat" in Swahili, and refers to a magnificent meal of grilled or roasted pork bits.
