Optional: add blueberries or chopped apples for a fruity pancake. 1 Combine oats, eggs, cottage cheese, banana and vanilla in a food processor. Process until completely smooth. Add baking powder and cinnamon, process for another second to mix in. 2 Heat skillet over medium heat and coat with cooking spray. Spoon batter in. 4 Repeat with remaining batter. 5 Serve with Greek yogurt, berries, fresh fruit and maple syrup.
