Slow-Cooker Chicken Burrito Soup. 2 chicken breasts thinly sliced, 1 pound. 1 medium onion, diced. 1 small red bell pepper thinly sliced. 1 small orange bell pepper thinly sliced. 1 small yellow bell pepper thinly sliced. 1 tsp chili powder. 1 tsp ground cumin. 2 tbsp garlic powder. 1 tsp chicken bouillon powder. 1/2 tsp dried oregano. 3/4 cup brown rice, uncooked. 1 can black beans 15 oz. can, rinsed and drained. 1 can mild green chilies 4 oz. can. 1 can diced tomatoes 28 oz. can. Hot sauce to taste.

This recipe maintains the classic feel of mashed potatoes, but includes a little bit of protein and fiber to help slow down digestion. They also taste fantastic on their own, eliminating the need for a pool of gravy on your plate. 2lbs yellow or red petite potatoes. 1-3 garlic cloves, peeled. Cup milk (use whatever milk you keep in the house- if you have a lactose intolerance to be aware of, use lactose free milk). Cup grated parmesan cheese. Cup chives, sliced. 1 1/4 cup oats. 1 cup cottage cheese. 1 tsp vanilla extract. 2 tsp baking powder. Optional: add blueberries or chopped apples for a fruity pancake. 1 Combine oats, eggs, cottage cheese, banana and vanilla in a food processor. Process until completely smooth. Add baking powder and cinnamon, process for another second to mix in. 2 Heat skillet over medium heat and coat with cooking spray. Spoon batter in. 4 Repeat with remaining batter. 5 Serve with Greek yogurt, berries, fresh fruit and maple syrup.

There is something about the crunchy topping mixed with the bubbling fruity filling that gets my mouth drooling.
