Peace, Love, ॐ, Cookies. Wednesday, March 16, 2011. Mmm, just in time for St. Patrick's Day: chocolate cupcakes made with GUINNESS. I opted to use this recipe from another blog. Because it offered an alternative to the Bailey's buttercream icing that many other recipes are using as their cupcake topping. I thought the Bailey's would be overkill, and would take away from the subtle Guinness flavoring of the chocolate cupcake. Live and learn. At least they still look adorable. Tuesday, January 11, 2011. 3 eggs, beaten. 1 teaspoon vanilla extract. 1 cup butter, softened. 1 cup brown sugar. 1 cup white sugar. 2 1/2 cups all-purpose flour. 1 teaspoon ground cinnamon. 2 teaspoons baking soda. 2 cups rolled oats. 3/4 cup chopped pecans.
