Sea salt and black pepper. 1 tablespoon seasoning (I used lemon and rosemary). 1 medium onion, cut into large chunks. 4 garlic cloves, minced. 1 cup diced fresh tomatoes. 3-5 small Zucchini’s, cut into large chunks. Sprinkle the seasoning on top of the drumsticks and add the onions, garlic, and tomatoes. Cover, turn the heat down to medium or medium-low, and simmer for 15 minutes.

Sunday, 1 July 2012. 700g lean minced meat (beef, lamb, chicken or turkey). 3 cloves of garlic. 4 tablespoons of tomato paste. Sage, mixed italian herbs, thyme, basil, ground cumin (just a pinch); cinnamon (a pinch). 800g tin tomatoes or 4 cups of fresh diced tomatoes. 1/4 butternut pumpkin sliced. 5 small zucchini sliced. 2 tablespoons of olive or macadamia oil. Pre-heat oven to 180 degrees. Put eggplant slices, zucchini and pumpkin in oven (lightly brush with oil) and roast for 15 mins.
