Saturday, November 1, 2008. While we're on the theme of pumpkin. 1 cup cottage cheese. 2 scoops vanilla protein powder. 1 teaspoon pumpkin pie spice. Preheat oven to 350 F. Blend cottage cheese, eggs and about 1/2 cup milk until smooth. Add remaining milk and 1 cup pumpkin and blend. Add all remaining ingredients, blend until smooth. Pour into sprayed pie pan. Bake for 40 minutes, or until pie is solid in the middle. 181 calories, 6g fat, 11g carbs, 2g fiber, 22g protein. November 5, 2008 at 4:31 PM.
