Somehow I managed to get a cold in the middle of summer. In fact, I got sick during the hottest week of summer thus far. It just feels wrong to be sick this time of year, and the cold I've had has been one of the worst in a while. So yesterday I decided I needed a cure in the form of pho. Seriously, use the Pho Finder. I've been having fun adventures lately with cooking whole chickens from roasting, to soup, to grilling. Here's a great grilled recipe that I tried from the July 2009 issue of Cooking Light. Grilled Spice-Rubbed Whole Chicken. My chicken spooning its other half on the grill. The finished chicken was delicious!

I don't exactly remember where we found it (food network, probably, so perhaps Giada? But it has consistently been an easy and tasty dish. Before the oven (with good lighting) . Portabella caps (1 per person). Olive oil (1 tsp / mushroom). Butter (1 tsp / mushroom). Clean mushrooms with a damp paper towel. Grill mushrooms, 3-5 minutes per side. Thursday, March 12, 2009.

Dinner (and drinks) by Ken. Saturday, September 5, 2009. This recipe is one I made up one day as a way to get rid of extra dough and extra chicken I had laying around. I didn't have a lot of other ingredients, so the original version was much simpler than the one picture below, and I think it was actually quite a bit better (I only had a little dough that time, so I had a thinner, crisper crust). 1/2 small roasting chicken (legs and thighs), diced. 1/4 cup hoisin sauce (Chinese BBQ sauce).
