60% Primitivo, 40% Negroamaro. Guagnano (Le), Sava (Ta), San Pietro V.co (Br). Alberello (5.000 ceppi per ha). Primitivo i primi giorni di settembre, Negroamaro fine settembre. Dopo la diraspatura e la pigiatura, il mosto rimane in macerazione con le bucce per 12-15 giorni, durante i quali viene effettuato giornalmente un delestage. La temperatura di fermentazione viene mantenuta entro i 26-28 C. Alla fine della fermentazione malolattica il vino viene posto in barriques dove sosta per circa 12 mesi.

Spalliera (4.500 ceppi per ha). Dopo la pigiatura e la diraspatura, il mosto rimane in macerazione con le bucce per 6-7 giorni. La temperatura di fermentazione viene mantenuta entro i 24-25 C. In serbatoio d’acciaio fino all’imbottigliamento. Vino pronto, con delicate evoluzioni olfattive nei successivi 2-3 anni, a cui seguono evoluzioni gustative orientate alla diminuzione della componente tannica.
