First week of September. Fermentation at 24 C., 12 days of maceration with daily delestage during the first 4 days. Malolactic fermentation in barriques. In new and once-used barriques for 14 months. Aged in bottle for no less than 12 months. The wine is ready to drink but will reach the peak of its evolution in 6-8 years. Intense ruby red with hints of violet. Seductive, rich, and smooth. Powerful structure with acidity that balances the wine’s elegant tannic character. 18 C (64 F.). June 23, 2015.

Teresa Manara Chardonnay :: Cantele Wines

Guyot (5,000 plants per hectare). After being crushed and gently pressed, the must is cooled to 10 C. in order to facilitate natural fining. The first part of alcoholic fermentation is carried out in stainless-steel vats with temperatures kept below 15 C. The must, still fermenting, is then transferred to barriques where fermentation is completed. The wine is then aged in barrique on its lees for approximately 8 months. Intense straw yellow with nuanced golden and green tones. 14 C (57 F.). June 23, 2015.
