Once the dough has been mixed, and kneaded till elastic (adding red wine vinegar until the consistency is right), it must be wrapped and refrigerated for 1hr. At this point, i called in for some help, knowing that the next part of the process might likely elude me. Rolled out cannoli dough! Taso rolling out the dough! This took care to ensure that the cannoli did not burn, and that the oil did not flare up. Would be a great activity to do with a big group!
