Some of the veg served with our chicken was kale and spinach sauteed in leftover bacon fat. Made it taste pretty good! Chicken breasts or whole chicken pieces. 1 tbsp Olive oil. 1 jar of sundried tomatoes. 3 cups of chicken broth. Preheat oven to 375. Marinate chicken with olive oil, paprika and s&p for 10mins or so. Its super easy and very yummy. 1 yellow onion, chopped. 2 cloves of garlic, minced. 1-2 boxes of organic chicken broth (I did 1 then added 1/2one when the veggies filled the pot). 1 can fire roasted tomatoes. 1/2 bunch celery, chopped. 3 peeled parsnips, chopped. 2 sweet potatoes, peeled and chopped. 1 bunch of spinach, chopped. 1/4 head of cabbage, chopped.
