Red Kite – Brett Hibiscus Berliner Weisse | leedsbrew
https://leedsbrew.wordpress.com/2014/03/27/red-kite-brett-hibiscus-berliner-weisse
Beer brewing in Leeds. Red Kite – Brett Hibiscus Berliner Weisse. March 27, 2014. March 28, 2014. Sour beer brewing is very much the ‘long game’. The turn around time for most sour/wild beers is in months if not years, rather than weeks as when brewing conventional beer! I have a good few sour beers on the go at the moment but non of them will be ready any time soon! So I’ll just have to wait! Hang on a minute though………sour mash! Could this be the ‘quick fix’ I’ve been looking for? 8220;This Belgian stra...
2013 Sour Baltic Porter 2014 Update | leedsbrew
https://leedsbrew.wordpress.com/2014/01/12/2013-baltic-porter-2014-update
Beer brewing in Leeds. 2013 Sour Baltic Porter 2014 Update. January 12, 2014. January 12, 2014. A year and a little bit on from the brew day. I thought it was about time it got an update. The last update was way back in March 2013. So relatively early days in the life of this beer. There was rich malt forward roastyness, with the fig and plum like fruitiness of Special B. Cantillon dregs have done a number on this one! So how have the split batches got on? Each one is good in its own right! I need to sor...
Solaris MKII | leedsbrew

Beer brewing in Leeds. January 14, 2014. February 7, 2014. Back in May was brewed for the Leedshomebrew /. Beer festival competition. Needles to say I didn’t win! I wasn’t happy with the way the beer turned out. The malt was a bit too sweet and the hops a little muddled. Well, this wrong needed to be righted! I also dropped the crystal malts down to just over 3.5% of carabohemia. I really like this crytal malt in pale beers, at a low %. The biscuit malt stays, with the very small (1%) additio...UK Roaste...
Little Solera Project | leedsbrew
https://leedsbrew.wordpress.com/2014/03/06/little-solera-project
Beer brewing in Leeds. March 6, 2014. I have been toying with the idea of starting a solera project for some time! Inspired by the Mad Fermentationist. Blog, Wild Brews book. And other resources, I really like the idea of an evolving, constantly ageing beer project. In march last year I brewed a batch of my house saison recipe, a brew day that was blogged here. As mentioned at the time I took about a gallon of wort to make a starter of WLP670 American Farmhouse, a blend reportedly from Lost Abbey. Having...

Preoccupied with Beer and Brewing. May 31, 2012. On glassware, enthusiasm and EBBC 2012. Between the laryngitis that blighted my EBBC weekend and some work deadlines I feel like I may have slightly missed the boat here. I think the majority has been covered by other, less tardy, bloggers so I’ll just share one observation. Like a lamb to the slaughter…. Clean directly after use or be prepared to tit about with a scrubber and a wooden spoon. So where did this leave me? Leave a Reply Cancel reply.

pintsizedticker: Norfolk Spoils
http://pintsizedticker.blogspot.com/2013/02/norfolk-spoils.html
Friday, 1 February 2013. We managed to steal a 4 day trip to Norfolk and Cambridge with some very good friends. Not wanting the trip to be all consumed with beer notes and chasing round the county trying to find local beers we hadn't planned on blogging. But, when we passed a sign for a shop that our guests knew proclaiming 60 different Norfolk beers we could not pass the opportunity, and our hosts were keen to join in. 177: Citraville, Old Slewfoot, 3.9%. 178: Honey Ale, Norfolk, 5%. Boak and Bailey's B...

Northern Craft Brewers / Saltaire 2014. May 12, 2014. It was with an air of excitement and anticipation that I left the house at 9am on Saturday morning to catch a train, Leedsward bound, for the 3rd Annual Northern Craft Brewers Homebrew Competition (#ncb2014 for short.) It was my second year attending the event which is skllfully organised by @pdtnc. Of Saltaire brewery – and soon to be Wishbone brewery – fame, alongside Shane Swindells @shaneswindells.
