Friday, 9 February 2007. Hi I have been looking for a way of preserving Artichokes but have not found any methods so far. The only way that I have found is to freeze them. Here's the details. Cut off the course outer leaves and the stems the you need to trim of the top and remove the choke. Wash thoroughly then blanch with a few drops of lemon juice. Blanch for 5-7 mins then drain upside down. Pack them in rigid containers. If anyone knows of a way to preserve, it would be good to learn. Juice of 2 lemons.

Tuesday, 23 January 2007. Pickles - Recipe for Sweet Marrow Pickle. 5 cups/2 pints/ 1 ltr white vinegar. 1 tablespoon/1/2 oz/15g whole cloves. Peel the Marrow then scoop out pith and seeds, cut into pieces about 1 1/2in x 1/2in. Put the vinegar sugar and spices into a saucepan and bring to the boil. Add marrow and cook gently stirring occasionally until the marrow is translucent and tender (but not Broken). Put marrow into clean jars. Cover tightly with vinegar proof lids. These blogs started with a recipe for Chicken or Pork cooked with courgettes, which led us into the methods of growing marrows and courgettes, so this must be the 1st vegetable we look at for storing. The courgette unlike the marrow can be frozen for later use. Here is one method of doing this. Trim of the ends of firm young courgettes, wash and cut into 1/2 in pieces (12mm).
