What you’ll need. 1 piece Frozen breaded fish fillet. 2Tbsp Olive oil (I used walnut oil for a nutty flavour). 2 Slices Bread or Pain de Campagne. 1 Stalk Mint leaves. Lettuces or mixed greens. Salt and pepper to taste. Chop tomatoes, cilantro and mint leaves into tiny pieces, combine and mix with 1 or 2 teaspoon of lemon juice depending how sour you want your salsa to be. Set aside.
