Off the eating path. Home of fermented commentary. Asymp; 1 Comment. How to make a sauce. Originally published in 2006). How did you make that sauce? Is a commonly asked question. Around my house it generally leads to a lengthy explanation as to how it actually went together. Say you have a small steak to cook. Once the steak has come to preferred doneness (rare, medium rare, etc.) take it out of the pan to rest and relax the juices. Once the fond has been scraped up add one minced clove of garlic and co...

In our fair city we have no butchers to speak of – at least in any great numbers. And if there are any out there – then please speak up – because I have no idea where you are but I would surely like to meet you (pardon the pun). The other guy cut four steaks. Not one of them even. Not one of them remotely close to the 2″...Don’t...

The Veg Out: Day 1 | nickgardner.wordpress.com
https://nickgardner.wordpress.com/2014/07/11/the-veg-out-day-1
The Veg Out: Day 1. There has been a lot of writing over the decades about what one should have as a Final Meal. What would yours be? Mine would be a slab of seared foie gras, gastrique and a fine Sauternes; main would consist of haunch of venison with sauce chasseur duchesse potatoes, turned vegetables and a 1945 Chateau Neuf de Pape; the fish course would consist of several pieces of. Which brings me with why I just wrote that. She did it with the help of our favorite food friend. The other dish took u...

The Veg Out: A Miniseries. So, I have mentioned before. On this blog something that I have been toying with, and that is wanting to take a month and go vegetarian. I understand for the hard core fans of eating this way, this is a bit of a cop-out as it is just 30 days and not much of a social commitment to eating less meat. I think they are wrong – here’s why. That means we are eating a minimum of one pound of animal protein per day – that is 30 pounds in a month and more likely over 400 lbs a year!

The One Shot: Papa’s Pier 17. On’t judge a book by its cover is a pretty good adage to apply to the restaurant industry. We see all sorts of gadgets and gizmos and doo-dahs to get the punters through the door. Some work extremely well – like the mecca of molecular gastronomy in Chicago, Alinea. Dine on smoke and foam and puffs of scent. Dining becomes theatre as well as a destination of choice. Enter Papa’s Pier 17. Fast forward nearly 30 years and things have changed a lot. We had an early reservation a...

So I am a carnivore. Or as my friend likes to say “Man didn’t get to the top of the food chain just to eat salad”. There is a point to that – or is there? I love to eat meats of all sorts and I am not afraid of any of them – off cuts as well as underutilized parts as well. It is just that we are getting into a rut lately and we have enjoyed the times when we have added at least one vegetarian meal to the weekly mix. I can honestly say that I make a pretty killer veg curry now. 8230;and baby makes three.
