Sunday, February 28, 2010. Mmmm…last week the students in the Secret Men’s Business class at. Whipped-up this salad of Tetsuya’s Soft Smoked OT with a fennel and fresh herb salad and home made mayo. (iPhone pic). Definitely one of the best smoked fish I’ve ever tasted. So good is this product that Chicago’s renowned Charlie Trotter often features it on his menu, as does Mario Tanora of Craft in New York City. Clearly, the great Tetsuya is a big fan. Aside from driving around chicken buses, Farmer Mark also runs a cattle herd on his property.
