My last post, “ Sheepherding 101. 8221; I wrote laying on my bed at Alain Jousseaume’s house in Poitou-Charentes, near Cognac on France’s West coast. I had planned to write about making Alain’s goat cheese, but unfortunately the cheese never made into the “Press.” Instead, I made a short film documenting the process, took lots of pictures and recorded notes–all for my own private use. After spending two weeks at Fromagerie Jousseaume.
