Hearty Split Pea Soup. 1/2 Large white onion, finely chopped. 2 Cups shredded carrots. 6 Stalks of celery, cut into 1/2 inch pieces. 2 Cups course chopped ham. 1 Cup dried split peas. 2 Tablespoons olive oil. Saute the onions, carrots, celery, and ham in olive oil just long enough for the celery just to start to soften, stirring often in a large pot. My mother in law often makes a dish whenever myself and my wife go and visit her and it has become one of my most loved dishes. She calls it sopa or simply fideo and when I hear those words, I instantly begin to salivate in anticipation! It is a very simple recipe and pairs well with a variety of other dishes, but it is in the preparation where it can easily be ruined. After trying several times, I finally got it!
