Cooking. eating. sharing. Late at night I love to drink wine and nibble on savoury snacks when the kids are all tucked up in their beds. There is nothing quite like soft cheeses, olives, and sweet crisp oat cakes with a glass (or two) of nz pinot gris or viognier. Are a Scottish marvel, and traditionally savoury, but I like a more modern sweet biscuit version. 180g fine rolled oats (I blend mine with handmixer). 3 tablespoons brown sugar. Just enough milk or water to bind together. Cool on a wire rack.

Ok, so not quite icecream, but semi-freddo is a gorgeous melt-in-your-mouth dessert that you can make without any technical equipment or re-stirring, re-stirring and re-freezing. Essentially just beat, mix, freeze and eat. Easy. I think the best kind of icecream to please everyone is vanilla. Goes with everything. So here is a vanilla bean semi-freddo recipe to please the masses. [adapted from a Living Etc. 2 free range eggs. 1 extra free range egg yolk. 1 tsp vanilla bean paste.
