It is rich and moist and fragrant with spices. I decided to put the nut mixture on top of the cake rather than layered in the middle, which gives it a crunchy top. I also adapted the recipe to use gluten free self raising flour, which was sent to me by the kind people at Vitarium. 1 cup brown sugar (packed). 2 tsp ground cardamon.

Coconut water is good at quenching thirst, partly because it’s high in electrolytes including potassium. This makes it similar to a sportsdrink. I recently received a tetra-pak of C Coconut Water. Peach, Mango and Coconut Smoothie. 1 cup peach in mango (including the fruit and juice, from a can). 2 scoops vanilla icecream. Add the coconut water and icecream and blend again.
