PEAR, PECAN and GINGER PANCAKES. Thursday, October 20, 2016. Whenever I go through a pantry-cleaning spree, I come across packets of flours or ingredients that were bought in a particularly inspired moment but have never been opened, or used just once and then relegated to the back shelves. The exceptions are staples like all-purpose and whole wheat flours, beans and lentils and a large Ball jar of my homemmade pancake mix. The same one I use for my jam-filled oat bran pancakes. 1 cup all-purpose flour.

LYCHEE,THAI BASIL and GINGER LIMEADE. Sunday, July 03, 2016. Although this was going to be a non-alcoholic drink, I wanted to use the same technique as cocktails to muddle the fruit and herbs so as to extract the best flavor. And it worked like a charm. Since I did not have the specific tools, I was thinking a potato masher should work just fine and then my eyes fell on the pastry tamper.which worked beautifully :). Happy 4th of July! Lychee, Thai Basil and Ginger Limeade. Makes approx 4 - 250 ml portions.

Sure there are simple desserts I make for special occassions, but the elaborate ones are saved for this day and I look forward to making at least one item that I have never made before.
